I had a great New Year today! I fixed a traditional southern style "comfort" dinner with meatloaf, hoppin johns, and cornbread. The hoppin johns incorporate black-eyed peas for good luck, collard greens for good wealth. They were so yummy and were great with the cornbread and the meatloaf. For those of you interested in how to make the hoppin johns, here's how I did it:
Ingredients: 3-4 slices of bacon fried crisp
1 medium chopped onion
5-6 chopped scallions with tops
1 pkg of frozen collard greens
2 cans of black-eyed peas
2 cups minute rice
3 cups chicken broth
Salt and Pepper to taste
Fry bacon until crispy. Pour off drippings, but leave approx 3 tablespoons. Saute onions and scallions in bacon drippings. When transparent add collard greens and cook with lid on until tender. Add black-eyed peas and minute rice and heat. Add broth, cover, and bring to boil. Reduce heat and cook until rice is fluffy and liquid has cooked away. Add salt and pepper.

that looks yummy! i hope you enjoyed it. ours came out a wee bit spicy and you know if I think it's spicy it IS! next time,not so much cayenne! but it was still delish. i let the girls have something else! ;)
